Rice in the husk, also known as paddy or rough rice, is the unprocessed, whole grain that still has its hard, protective outer layer or husk after being threshed from the plant. It is the most natural form of rice and is used as a raw material for processing, as it requires the removal of the hull before it can be consumed. This form of rice is not ready for eating and must undergo further steps like milling to remove the husk and sometimes the bran layer.

  • Definition: Paddy or rough rice is the rice kernel still enclosed in its hull. The hull makes up about 20% of the grain's weight.
  • Processing stage: It is the initial form of rice after it's harvested and threshed, before any further milling occurs.
  • Consumption: It cannot be eaten in this form because the hard outer husk must be removed through a process called hulling.
  • Hulling and beyond: After hulling, the rice is called husked or brown rice. If the bran layer is also removed, it becomes semi-milled or wholly-milled rice, which is what is commonly sold in stores.
  • Uses: Rough rice is sold to rice processing industries to be milled into edible rice. It can also be used for animal feed.
