Baking soda is used as a leavening agent in baking, an antacid to relieve heartburn, and to treat stomach ulcers. It can also be used to make blood and urine more alkaline
Ammonium bicarbonate is a white, crystalline, inorganic compound with a strong ammonia odor:
Chemical formula: NH4HCO3
Other names: Bicarbonate of ammonia, ammonium hydrogen carbonate, hartshorn, AmBic, powdered baking ammonia
Properties: Mildly basic, dissolves in water to create a mildly alkaline solution, insoluble in most organic solvents
Uses: Baking powder, fire extinguishers, dyes, pigments, leavening agent in baking, buffering agent

Ammonium bicarbonate is made by passing carbon dioxide through an aqueous ammonia solution. When used in baking, it releases carbon dioxide and ammonia gas at temperatures around 40°C. This improves the color and volume of steamed breads, but too much can cause an ammoniacal taste
